Online friend and frequent customer Larry Gober makes Oklahoma a tastier place. He developed this recipe for his client Roxana, and we're all the more fortunate for his sharing it here.
Roxana's Quinoa Tabbouli
1 cup RG quinoa, uncooked
(N.B. The quinoa in the photo is our red quinoa)
1 cup chopped parsley
1 cup Santa Sweet tomatoes, quartered
1/2 cup diced english cucumber
1/4 cup chopped mint
3 scallions chopped
1 clove garlic minced
1/4 cup fresh lemon juice
1/4 cup good olive oil
1 tsp salt
Cook quinoa in 1 1/2 cups simmering water, drain and cool. Mix everything in a bowl and toss well, chill.

Larry, this sounds wonderful! I'll have to find the ingredients here...being new to the area, the only store I've found so far is the basic grocery. I need to find a more gourmet store. Anyhow, sounds wonderful and can't wait to try it!
